Eggplants have more selenium than other vegetables. Peel the fresh round eggplant,and cut into  wires, add salt and sesame oil as salad consumption. Selenium has antioxidant, is able to maintain the normal function of human cells, enhance immunity, prevent disease on the human body, and have anti-aging effects.  It can also have anti-cancer effects through metabolism.

It may not be everybody's favorite but eggplant is a great health food! It's low in fat and sodium and packed full of dietary fiber, vitamins C and B6 magnesium, phosphorus and pottasium.

I love eggplants and it is a stable diet of a vegan.   I am not a vegan.
