Food from my kitchen

           I like cooking and enjoy the tasty food, also because I make it by myself. I also like learning to cook new dishes and enjoy sharing to others.
 
           I will show some of the food that I cook in my small kitchen.

Baked Sandwiches

Baked Sandwiches


     Many people eat bread every day, but I don't like bread so much and only eat it sometimes. Every time I will add something to the bread and fry or bake for a while, then the bread will be a little crispy. For me, to eat bread with milk, juice or soup is OK.




INGREDIENTS:
 
Toast                                    6 slices, edges cut
Bacon                                   4 slices
Pepper Jack cheese                 4 pieces
Butter                                   30g
Dried or fresh parsley             a little, chopped


INSTRUCTIONS:

1. Preheat the oven 180℃.

2. Cut the bacon into halves, then put them into a pan and fry for a while.

3. Brush butter on the toast. Put one piece of cheese on the toast, then two slices of bacon, cover with a slice of toast. Make a sandwich with 3 slice of toast.

4. Cut the sandwiches diagonal, or leave it the whole as you like. Sprinkle some parsley. Then put them into the oven and bake for 10 minutes.

Baked Pepper Salad with Capers and olives


The colorful salad looks very nice and tasty, doesn't it? Yes, it's sure. And it's a good appetizer.




How to make it:

INGREDIENTS

         1 large green bell pepper

         1 large yellow bell pepper

         1 large red bell pepper  (or any color bell pepper available)

         20 black olives

         3 tablespoons of capers

         2 cloves of garlic, chopped

         1/2 bunch of coriander, chopped

          3 tbsp. apple vinegar

         2 tbsp. olive oil

         freshly ground black pepper and salt to taste


INSTRUCTIONS

 
         1. Preheat the oven 210℃.

         2. Cut the bell peppers into 4 pieces. Then bake in the oven for 30 minutes.

         3. In a small bowl, whisk together salt, garlic, vinegar, olive oil and caper brine.

         4. Drain well the olives and capers.

         5. When the baked peppers cool down, peel off the skins. Then cut the peppers into short, thick strips.

         6. Then combine the pepper strips, olives, capers, coriander and dressing.  You can serve it right away, but this is also a perfect dish to make ahead and let marinate at room temperature until you're ready to serve it.

Potato pie with cheese, mushroom and bacon


About potatoes, I like to eat baked potatoes most. So I like to cook every kind of potato food. Also we like cheese very much. Potatoes, cheese, mushroom and bacon together, how tasty do you think it is?



How to cook:

INGREDIENTS

1 big potato
4 slices of bacon, cut into small pieces
5 mushrooms, cut into small pieces
1/4 onion,chopped
100g Mazzarella cheese
2 tbsp Kewpie Thousand - Island Dressing
oil


INSTRUCTIONS

1. Peel the potato and cut it small, then boil it. When it is ready, mash it in a big bowl and add the dressing, mix well.

2. In a pot with boiling water, put in the mushroom for half a minute and take them out to drain.

3. Heat a pan with some oil, fry bacon for 1 minute then add mushrooms to fry together for 1 minute, take away from the heat and mix with the onions.

4. Put half of the bacon mixture in to potato and mix well. Then in a baking ware, place half mashed potato in the bottom, then add the rest of bacon mixture, and then the rest of mashed potato  on the top.

5. Top with cheese. Put it in the oven for 15-20 minutes. Serve hot.

Vegetable salad with pears

     My husband likes salad very much, but he doesn't like it with fruit so much. I don't eat salad often, but I think vegetable salad with fruit is very tasty, haha :)



Ingredients

1 pear peeled and half for making juice, half shredded
1/3  carrot peeled and shredded
1/3 cucumber shredded
half  green pepper shredded
half red pepper shredded
1 egg fried and shredded
1/2 tsp oil
1 tsp vinegar
half tsp sugar
salt to taste

Pear juice mixed with salt, oil, vinegar and sugar. Put all the vegetable and pear shreds in a big bowl, add the pear juice and mix well, wait for half an hour and serve.

My lovely breakfast

      I enjoy watching "Tom and Jerry" very much till now. And I like Jerry most, when he sees cakes and cheese he is always full of power. There was one slice of bread left then I found some other things to make my lovely breakfast this morning.
     What do you think of my small "Jerry"?  8)



1 slice of bread
1 egg boiled and cut into halves
1 piece of cheese
1 piece of instant bacon
some carrots and cucumber, chopped
sesame for eyes

Chinese potato salad


Do you like Chinese food? It's very tasty potato salad but in Chinese style.



1 potato, shredded
some red and green peppers, shredded
4 dry red pepper, cut into halves
2 cloves of garlic, chopped
some green onions, chopped
2 tsp soy sauce
2 tsp vinegar
4 tsp oil
salt to taste

Boil potato shreds for a while and then put them in the cold water to be cool then drain. In a small pan, heat the oil then put in garlic, dry red peppers and green onions. Add soy sauce, vinegar and salt and mix well.
Put the potato shreds into a big bowl, add the dressing and mix well.

My home-made pudding


This is the first time I made puddings at home. I think it's very successful and very tasty.



 to make caramel:

       40g white sugar
       15g cold water
       50g  hot water
Mix white sugar with cold water then heat it when it turns brown and take away from fire. Pour in the hot water at once.

  to make pudding mixture:

      2 eggs
      1 egg yolk
      200g milk
      100g cream
      25  condensed milk
      a few drops vanilla extract

Preheat the oven 160℃。
In a small pot, mix milk , condensed milk and vanilla extract then heat it a little. Add cream and caramel to mix well and leave it cool.
 Beat the eggs and yolk in a big bowl, then add in the milk mixture and strain it twice. Put it in some small bowls, cover with foil. Put ovenware with hot water, above it is the roasting net. Put the bowls with puddings on it and bake for 50  minutes.

Toast cubes with garlic and butter


When I eat bread, I prefer to bake it for a while in the oven and then it's a little crispy. With a cup of coffee or tea or milk, this will be a very good afternoon tea, haha...



2 slices of toast
2 cloves of garlic, chopped
40g unsalted butter,at room temperature
some dry parsley

Preheat the oven 180℃.
Cut the toast into cubes. Mix the butter with garlic and parsley well. Paste up the toast cubes with butter mixture.
Put them in the over and bake for around 20 minutes until the cubes are golden.

Spring Salad


Very colorful salad and it's very tasty.



6 cherry tomatoes, cut into 4 halves
1/4 red pepper, shredded
1/4 yellow pepper, shredded
5 quail eggs
some lettuce
olive oil
black pepper
salt to taste

Boil the quail eggs. When they are cool down and remove the shell, then cut into halves.
Mix all the ingredients well  with black pepper, olive oil and salt.

Fried tofu


Most Chinese like tofu and there are many ways to cook it. When I was a kid, we made tofu at home and I could made very tasty tofu by myself.
This is a very simple way to cook tofu  but it's very tasty.



200g tofu, cut into pieces
1 small hot pepper, chopped
some green onions, chopped
1 tsp soy sauce
half tsp oyster sauce
oil
salt to taste

Put the pan on fire and add some oil, then put tofu in it and fry until it's brown. Add in pepper and green onions, then add soy sauce and oyster sauce, at last add salt to taste and fry them together. Serve hot.

Fried Sauries


I like to eat sea fish. Just simple cooked and already very tasty.



4 sauries
3 small sour oranges
oil
  cummin, black pepper, salt to taste

Clean the sauries, salted with orange juice for 30 minutes. Heat the pan with oil, then dry the fish and fry them, during frying ,add cummin and black pepper, till the fish are ready.
