Title: Vegetable Soup

Vegetable Soup

Ingredients

2 tbs of oil
1 onion, peeled and chopped
1 leek, thinly sliced
2 cabbage leaves, shredded or finely chopped
1 courgette, finely chopped
1 carrot, scraped and sliced
1 tsp mixed herbs
1 bay leaf
2 pints (1 litre) of vegetable stock
Salt
Pepper

Directions

Heat the oil in a large saucepan, then fry the onions for about 5 minutes or until they have softened. Add the other vegetables and fry for a further 10 minutes. Add the stock and herbs then season. Bring to the boil, then simmer for 30 minutes. Remove the bay leaf before serving. If you want a smoother textured soup then liquidize before serving.

I can comment this interesting recipe in two points as follow:

1. I didn't know what's 'courgette'. Right now I see it's the same as zucchini:

2. 'Mixed herbs'. Be careful, when you mix herbs. Once a family suggested me some mixed herbs soup/tea (because it's 'very healthy') and then soon I had the worst headache in my life! It was literally terrible and I still remember that pain. :(

Yes, this herbs thing is kind of individual, you know...

Mixed herbs usually refers to those that are tried and true, not just what you can come up with in your 'experiment'. An example of this mixed herbs can be found in the recipe called Herbs de Provence (http://allrecipes.com/recipe/223272/herbs-de-provence/). There are many others of like nature.

There is never 100% security about herbs, plants and other food. I was very surprised to learn about the favism. A boy ate fava beans (https://en.wikipedia.org/wiki/Vicia_faba) and got very sick. ::) I couldn't believe that just some edible beans are the reason of his health problem and I doubt the doctors diagnosis.
