Easy Fruit Cobbler


2 Cans of Your choice pie Filling
2 Cans of fruit With syrup that will compliment your Pie filling choice
1 White cake mix
1 Stick Butter ( Must be real butter)


Pre heat oven to 350 F. In a 9x13 Cake pan put 2 cans of pie filling spread evenly throughout the pan, Top Pie filling with the fruit and syrup. Top with dry cake mix. Slice butter into pats and cover cake mix evenly with butter slices. place in the oven for 30 to 45 minutes or until top is golden brown. Serve fresh from the oven warm or cool and serve with Vanilla Ice cream.

Green Bean Casserole


1 roll of Ritz crackers
1/2 cup of milk
1 can, minced clams drained
1 can, green beans drained
spices as desired


In cup of milk, crumble crackers and allow to soak. Spread butter within baking pan to keep food from sticking. Preheat oven to 350 Put milk and crackers into baking pan, add minced clams. Stir to mix. On top of milk and crackers, add beans. Add spices, put in oven.

Cook for 1 hour.

Tuna Noodle Casserole In Microwave


1 can cream of mushroom soup
1 1/4 cups milk
3 cups hot cooked rotini pasta
1 (12.5 ounce) can tuna, drained and flaked
1 (2.8 ounce) can French fried onions, divided
1 (10 ounce) package frozen peas and carrots
1/2 cup shredded Cheddar cheese


In 2-quart microwave-safe dish, mix soup and milk. Stir in pasta, tuna, 2/3 cup French fried onions, vegetables and cheese. Cover; microwave 10 minutes or until hot, stirring once. Top with remaining 2/3 cup onions. Microwave 1 minute

Creole Jambalaya


1/2 lb smoked sausage, cut
1/2 lb ham, diced
1 c onion, chopped
1 c bell pepper, chopped
1 c celery, chopped
1 c green onions, chopped
2 cloves garlic, minced
1 1/2 tbs Worcestershire Sauce
1 can whole tomatoes, drained (reserve liquid)
Pinch thyme
1 tsp black pepper
1 tsp salt
3 cs Uncle Ben's Converted Rice
1 1/2 cs stock water
2 lbs fresh shrimp, deveined


Place sausage and ham in very heavy Dutch oven and saute until lightly browned. Remove from pot and set aside. Saute onions, bell pepper, celery, green onions and add meat drippings. Cook until tender. Add tomatoes, thyme, pepper and salt. Cook for five minutes. Stir in rice. Mix together liquid from tomatoes, stock and Worcestershire sauce equal to 2 cs and add to sauteed vegetables. Bring to a boil. Reduce to a simmer and add fresh shrimp, ham and sausage. Cook uncovered, stirring often for about 30 minutes or until rice and shrimp are done.

Baked Tilapia



2 tilapia filets (8 ounces each)
2 teaspoons butter or margarine
1/2 fresh lemon

Lemon-Parmesan sauce

1/2 cup mayonnaise
1/2 lemon, for juice
1/2 cup grated Parmesan cheese
3 tablespoons fresh green onions, chopped fine
1/4 teaspoon seasoned salt
Black pepper to taste


1 lemon, sliced
1/2 teaspoon fresh parsley


Rinse tilapia in cold water. Lay filets in single layer on buttered baking dish. Top with butter and lemon juice. Bake at 350 degrees for 15 to 20 minutes. Mix mayonnaise, Parmesan cheese, green onions, seasoned salt, black pepper and lemon juice in a small bowl. Spread mixture on fish and bake for another 5 minutes, or until golden brown.

Crab Lasagna


3 cups garlic cream sauce
1 cup ricotta cheese
1 cup Parmesan cheese
1 cup mozzarella cheese

Crab Stuffing

20 lasagna noodles
2 tablespoons fresh basil, shredded
2 tablespoons fresh parsley, chopped
2 tablespoons green onion, sliced
3 tablespoons jumbo lump crab meat
4 peeled and deveined jumbo shrimp


In a baking pan, ladle four ounces garlic cream sauce into bottom and spread evenly. Lay uncooked lasagna noodles on top of sauce, overlapping slightly to cover bottom. Ladle four ounces garlic cream sauce on top. Spoon on crab stuffing, one inch thick. Sprinkle stuffing with 1/2 cup Parmesan cheese. Spread one cup of ricotta cheese on top. Lay more noodles on top of cheese. Ladle four ounces of garlic cream sauce on top and spread. Spread on another one-inch layer of crab stuffing. Sprinkle with 1/2 cup Parmesan. Sprinkle with one cup mozzarella. Ladle four ounces of garlic cream sauce on top. Cover with noodles. Smear top with garlic cream sauce.

Bake at 350 degrees F for 45 minutes. Cool and cut. Top each with mozzarella and Parmesan cheese and bake until hot and cheese is melted. Top with jumbo lump crab meat, shrimp sauteed with basil, butter, parsley, green onions and white wine.

Vegetable Soup


2 tbs of oil
1 onion, peeled and chopped
1 leek, thinly sliced
2 cabbage leaves, shredded or finely chopped
1 courgette, finely chopped
1 carrot, scraped and sliced
1 tsp mixed herbs
1 bay leaf
2 pints (1 litre) of vegetable stock


Heat the oil in a large saucepan, then fry the onions for about 5 minutes or until they have softened. Add the other vegetables and fry for a further 10 minutes. Add the stock and herbs then season. Bring to the boil, then simmer for 30 minutes. Remove the bay leaf before serving. If you want a smoother textured soup then liquidize before serving.

BBQ Sauce


2 c water
3/4 c corn syrup
1/2 c tomato paste
3 tbs molasses
3 tbs brown sugar
1 tbs liquid smoke
1/2 tsp salt
1/4 tsp onion powder
1/4 tsp pepper
1/8 tsp paprika
1/8 tsp garlic


Combine all ingredients in a medium saucepan over high heat and whisk until smooth. Bring mixture to a boil, then reduce heat and simmer for 45 to 60 minutes or until mixture is thick. Cool then store in a covered container in the refrigerator overnight so that flavors can develop.


There are tons of BBQ recipes. All different or with slight variations on the same themes. So one size doesn't always fit all. It's more to your taste buds and what you like. For me, I always make my own and never do the store bought.

Cold Potato Salad


6 med Potatoes
1/4 tsp Pepper
1 1/2 c Mayonnaise
2 med Stalks Celery, Chopped
1 tbs Vinegar
1 med Onion, Chopped
1 tsp Mustard
Prepared 4 Eggs, Chopped, Hard Cooked
1 tsp Salt


Prepare and cook potatoes. Cool slightly. Cut into roughly 1 inch cubes. Mix mayonnaise, vinegar, mustard, salt and pepper in large glass or plastic bowl. Add potatoes, celery and onion; toss. Stir in eggs. Cover and refrigerate at least 4 hours.


Made some of this night before last. Still a bowl sitting in the fridge. Good hot weather food, used often here for picnics, fried chicken, family reunions, cookouts, and the like.
With mine I usually add about 4 tbs of sweet relish and many use ground paprika sprinkled on the top for visual appeal.

There's a trick to it of getting the potatoes just right. Peel your spuds, I usually chopped them up before cooking, not after, and the trick is do not over cook. You want them cooked but with a slight firmness to the potato. It is crumbly it's over cooked.

Tex-Mex Roasted Chicken For The Microwave


1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon basil
1/4 teaspoon salt
1 tablespoon white wine vinegar
1 (3 pound) broiler, skinned
2 cups coarsely chopped zucchini
1 1/4 cups unpeeled, seeded and coarsely chopped tomatoes


Combine first 6 ingredients; stir well and set aside.

Remove neck and giblets from chicken and discard. Rinse chicken and pat dry. Rub outside of chicken with spice mixture. Place chicken, breast side down in a deep 3-quart casserole. Cover with wax paper and microwave on HIGH for 8 to 9 minutes.

Turn chicken breast side up and microwave, covered with wax paper, on HIGH for 8 to 9 minutes.

Remove chicken to a serving platter. Reserve drippings in casserole. Let chicken stand covered for 15 minutes.

Add vegetables to drippings, tossing to coat. Microwave on HIGH for 3 to 4 minutes or until crisp-tender, stirring halfway through cooking.

Arrange vegetables around chicken.

Breakfast Bread   


2 cups all-purpose flour
2 1/4 teaspoon baking powder
2 tablespoons fresh chopped thyme
2 tablespoons fresh chopped chives
1/3 cup chopped red peppers
9 eggs
1 cup soft butter
3 tablespoons mustard
1 1/2 cups chopped ham
2 cups Gruyere cheese
1/2 teaspoon ground pepper


Prep all your ingredients before hand, this will help to make sure things move quickly and to be sure you have all the ingredients. In a bowl combine the flour, thyme, chives, baking powder and red peppers. Mix together, in a separate bowl combine the eggs, soft butter and mustard. Mix till well blended. Add in the freshly ground pepper and stir. Pour the wet ingredients into a large bowl. Pour in half the flour mixture and mix just till blended. Add in the chopped ham and the cheese. Mix together. Add in the rest of the flour mixture and stir just till mixed. Do not over mix. Pour into 2 greased medium 8x4 loaf pans.

Bake in a 375F oven for 30 - 35 minutes. Allow to cool for 10 minutes then remove from pans.

Bean Toss Salad


1 can cut green beans
1 can red kidney beans
1 green pepper, sliced thin
1 Tbsp. vinegar
1 cut yellow wax beans
1 onion, sliced thin
1/2 cup Italian Salad Dressing
1 Tbsp. Worcestershire sauce
1 tsp. celery seed
Salt & pepper


Drain beans thoroughly and combine with salad dressing, Worcestershire sauce, vinegar, celery seed, salt and pepper. Marinate 24 hours, stirring occasionally. Half hour before serving, toss with onion and pepper rings.


This particular recipe comes from New Orleans, served in one of their restaurants. Used to be I collected recipes from the local newspaper many years ago. They ran a feature, where various restaurants and chefs provided the readership with signature dishes you could do at home. I have a good many of these, though most all are not vegetarian based.

Cajun Boiled Potatoes


1/2 gallon water
2 lbs red potatoes, cut in half
2 tbs black pepper, whole
2 tbs kosher salt
2 oz liquid crab boil
12 toes garlic, peeled
1/2 large onion, sliced
1 stalk celery, sliced


In a small saucepot, add all ingredients. Bring to a boil and then simmer. Cook about 25 minutes, or until potatoes are soft. Cool down to stop cooking. In a small saucepan, heat two tbs of butter. Add potatoes and saute until brown. Season to taste with salt and pepper.

Crab boil

2 parts dried bay leaves; broken into small pieces
2 parts fine ground cayenne pepper
4 parts celery seeds
4 parts dried coriander seeds
8 parts dried brown mustard seeds
2 parts dried whole black peppercorns
1 part dried whole allspice berries
1 part dried whole clove buds
2 parts dried crushed red pepper flakes
2 parts dried thyme leaves

Combine all ingredients and put in a sealed jar. When ready to use, put in a fine mesh cloth pouch. This is so you don't have to try and separate the spices out once cooked. You can just remove the bag and the spices never get mixed in with the potatoes.

Vegetable and Hamburger Casserole


1 med. sliced onion
2 sliced bell peppers
2 c whole grain corn
4 sliced tomatoes
2 hard boiled eggs
1 lb hamburger
1/2 c soft bread crumbs


Brown peppers and onions. Add meat and mix throughly. Add seasoning. Place layer of corn in baking dish, followed by layer of hamburger, then a layer of tomatos, repeat till all are used. Cover top with bread crumbs. Dot with butter. Bake 35 minutes at 375 F. Top with sliced eggs.

Crab Casserole


1/2 c celery, fine chop
1/2 lg green pepper, chopped
1/2 c green onion, chopped
1 tsp parsley, dried
1 lb crab meat
1 1/4 crackers, crushed to crumbs
1/3 tsp dry mustard
some dashes of Tabasco
1/4 c heavy cream
1/4 c butter, melted


Divide cracker crumbs in half. Mix one part of crumbs with ingredients in large bowl. Butter baking dish and pour mixture into dish. Cover with remaining crumbs. Bake at 350 F for 30 minutes.
